Preheat your oven to 325 degrees F and line a baking sheet with parchment paper. In a large bowl, stir together the flour and 1/2 cup sugar. Cut in the butter until the mixture is crumby. Stir in the cherries and 4 oz of white chocolate. Stir in the almond extract and food coloring. Form the mixture into a ball and knead until smooth. Shape the dough into 1 inch apart on the prepared sheet. Flatten the balls. Bake for 10-12 minutes them let cook on the baking sheet for 2 minutes.
