Vegan ginger muffins
Our first venture into vegan baking turned out to be a big favorite at the café.

Ingredients:
- ¾ cup + 1 tablespoon (162g) grapeseed oil
- ¼ cup + 2 tablespoons (128g) molasses
- ¾ cup (229g) maple syrup ¼ cup + 2 tablespoons (85g) soy milk 1
- ½ cups (180g) all-purpose flour
- 1½ teaspoons baking powder
- ¾ teaspoon baking soda 1 tablespoon + 1½ teaspoons ground ginger
- 1½ teaspoons ground cinnamon
- ¼ teaspoon + ⅛ teaspoon ground cloves
- ¼ teaspoon + ⅛ teaspoon sea salt
- 2 tablespoons powdered sugar, for dusting
