In a large mixing bowl, cream together the butter and sugar until fluffy. Add in the egg, vanilla extract, and almond extract until well combined. In a separate bowl, combine the flour, baking powder, and salt. Slowly add the flour mixture to the butter/sugar mixture and mix well. Roll the dough with a rolling pin between 2 sheets of parchment or wax paper and place on a baking sheet. Refrigerate for 30 minutes. Preheat your oven to 350 degrees F and line 2 baking sheets with parchment paper. Cut the dough into shapes using cookie cutter and transfer to a baking sheet. Sprinkle with colored sugars (if using) and bake for 8-12 minutes. Cool on the baking sheet for 5 minutes the transfer to a rack to cool completely. Store in an aright container.
