Strauben
The Tyrol is a region where different languages are spoken: Italian, Ladino and German. In a summer the Strauben (from German Straub) is prepared everywhere in the region. It’s a relatively new dessert that often accompanies the grappa, the most appreciated Italian marc brandy.

Ingredients:
- 1 cup milk
- Salt
- 1 1/2 flour
- 3 eggs
- 1 1/4 tablespoons butter
- 2 tablespoons sugar
- Frying oil
- Powder sugar
Preparation:
Into a bowl mix together milk, flour, a pinch of salt, egg yolks and melted butter. Beat the egg whites with sugar and add to the mixture gently. If you want, add a glass of grappa (Italian brandy). Heat oil in a pan, pour the mixture into a funnel and drop it into the pan to form a spiral and let fry until golden. Remove Strauben from the pan and blot with paper towels. Sprinkle with powdered sugar and serve warm, accompanied by lingonberry jam.
