Boil the washed potatoes in their skin for 20 minutes: drain, peel and mash. Add the other ingredients to make the dough. Place on a flat surface and mix in the chopped parsley and chives; season with salt and pepper and nutmeg. Brown the sausage in a little oil then mix in with the potato and knead for a couple of minutes. Form into small balls and coat in the flour before frying in plenty of hot oil. Drain on kitchen paper and serve hot.
