Preheat oven to 350F. Lightly grease a 10x15x1 inch baking pan. Place cubed sweet potatoes in large pot of water on stove top, bring to boil for 15 minutes to soften. Remove from water and drain. Set aside. Into a small mixing bowl, combine the first four spices, mix to combine. Set aside. Into a separate large bowl, put the sweet potatoes and drizzle with 1 tsp of spice mixture and 3 tsp of olive oil. Toss to coat. Evenly spread potatoes into a prepared baking pan and bake for about 10 minutes. Set aside. Brush remaining olive oil into the pork and rub remaining spice mixture. Position pork over the potatoes and bake further for 20 minutes. Turn pork the other side and evenly put apples around the meat. Bake for another 20 minutes or until meat temperature reaches 145F.
