Rich minestrone

Serves: 4

Ingredients:

  • 200 g thick soup of mixed vegetables
  • 200 g minced veal
  • 1 egg
  • 20 g grated bread
  • 30 g breadcrumbs
  • 2 fennel flowerheads
  • 1 teaspoon or fennel seeds

Preparation:

In a bowl mix the meat with the beaten egg, the cheese and the breadcrumbs (both) then flavour with the parsley and salt; mix well to create an even texture, then from into largish balls. Heat up the minestrone then add the meat balls and flavour with the fennel. Cook for ten minutes.
