Boil the washed potatoes in their skins for 20 minutes; drain, peel and mash. Allow to cool before mixing in the cheese, some breadcrumbs, the parsley and the seasoning. Separate the eggs stir in the yolks to the mix and put the whites in a separate bowl and beat them. In another bowl put the remainder of the breadcrumbs. Stir the mixture again and form into elongated oval shapes. Dip each in the beaten egg white on the end of a folk, then coat in the breadcrumbs before frying in plenty of hot oil.
