Potato and mint croquettes
Serves: 6
Ingredients:
- 1kg potatoes
- 3 eggs
- 100 g grated Parmesan
- Oregano
- A few chopped leaves mint
- Nutmeg
- Salt
- Pepper
- Breadcrumbs
- Olive oil (for frying)
Preparation:
Boil the washed potatoes in their skins for 20 minutes: drain, peel and mash. Allow to cook and mix in with all the other ingredients. Form into elongated oval shaped the coat each with the breadcrumbs before frying in plenty of hot oil. Serve hot.
