Poppy seed lemony muffins

Ingredients:

  • 1/4 cup heavy cream
  • 3/4 almond flour
  • 1 tbsp baking powder
  • 2 tbsp poppy seeds
  • 1/4 flaxseed meal
  • 1/3 cup erythritol
  • 1 tbsp lemon zest
  • 1/4 cup melted and salted butter
  • 3 tbsp lemon juice
  • 3 eggs
  • 25 drop liquid stevia
  • 1 tbsp vanilla extract

Preparation:

In a small bowl crack the eggs and whisk then add butter and cream into it and mix well. Then add the remaining ingredients and mix well once again. Then you must pour the batter in the cupcake molder cups and bake in the oven over 260 degree F for 20 minutes until the batter stiffens and brown color appears. Then let the cupcakes cool and the serve.
