Line a baking sheet with parchment paper and spray with non stick spray. Place the semi sweet chocolate chips in a microwave safe bowl for 2 minutes, stirring every 30 seconds. Pour the melted chocolate onto the prepared pan and spread into an even layer. Let cool. Repeat step 2 with the white chocolate chips ten stir in the peppermint extract. Spread this mixture onto the cooled chocolate layer on the baking sheet. Sprinkle the crushed peppermints onto the white chocolate layer and gently press the pieces in with a spatula. Let cook then break into pieces before serving.
