Boil the washed potatoes in their skins for 20 minutes; drain, peel and mash. Add half the grated cheese, half the breadcrumbs, two egg yolks and the salt and pepper. Set the egg whites aside in a bowl. Boil the other two eggs until they are hard. Sauté the chopped onion a little oil and add the minced beef and the wine and cook for few minutes before adding the tomato salsa. Cook until the mixture becomes a thick meat sauce and then add the rest of the cheese and the diced hard boiled eggs.
