Keto goat cheese and mushroom frittata

Ingredients:
- Mushrooms: 5 oz
- Fresh spinach: 3 oz
- Scallions: 2 oz
- Butter: 2 oz
- Eggs: 6
- Goat cheese: 4 oz
- Pepper
- Salt
- Leafy greens: 5 oz
- Olive oil: 2 tablespoons
Preparation:
Preheat the oven to 175 degree Celsius or 350 degree Fahrenheit- Crack eggs in a mixing bowl ad the whisk them. Crumble or grate cheese and put it in the mixing bowl. Season the mixture with pepper and salt to taste. Slice the mushrooms in the shape of wedges and then cut the scallions. Take an oven proof skillet and melt the butter in it. Then, cook the scallions and mushrooms on medium heat until they are golden brown or for around 5 to 10 minutes. Now, put the spinach in the pan and sauté it for around 1 to 2 minutes. Finish it up with pepper and salt. Pour the mixture of egg in the skillet, before keeping it in the oven. Bake this mixture until it turns golden brown in color and set or for around 20 minutes. Serve with olive oil and leafy greens.
