Ingredients:
- Eggs: 6
- Finely chopped scallion: 1
- Air dried chorizo or cooked bacon or salami: 5 oz
- Shredded cheese: 3 oz
- Green or red pesto: 1 tablespoon (optional)
- Salt
- Pepper
Preparation:
Preheat the oven to 175°C or 350°F. Chop meat and scallions. Whisk all the eggs, along with pesto and seasoning. Then, add cheese to this mixture and stir. Place this batter in the form of muffins. Add chorizo, bacon, or salami. Bake for around 15 to 29 minutes as per the muffin size.
