Ingredients:
- 1 chicken breast
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/4 tsp salt
- 2 cups mixed lettuce leaves
- 1/2 avocado, pitted and sliced
- 1/4 cup capers
- Coconut oil for cooking
Preparation:
Start by heating and grill pan over medium heat with the coconut oil. While the pan is heating up, season the chicken with the olive oil, garlic powder and salt. Cook for about 10 minutes on each side or until cooked through. Add the lettuce to a large mixing bowl with the avocado and capers. Top with the chicken breast and enjoy. Serving suggestion serve with a balsamic vinegar and olive oil dressing.
