Green marrow soup
Serves: 4
Ingredients:
- 1 medium green marrow
- 100 g diced fatty streaky bacon
- 100 ml olive oil
- 1 red onion
- Parmesan rind
- 50 g well cleaned fresh tomato
- 100 g thinly sliced celery
- 1 leg diced basil
- Parsley
- Oregano
- Salt
- Pepper
Preparation:
Peel and de seed the marrow and cut up into matchstick. Chop up the vegetables and put everything in a pan along with all the other ingredients and cook over a moderate heat for 30 minutes.
