Line a baking sheet with parchment paper and spray with non stick spray. In a 2 quart glass bowl, combine the sugar and corn syrup. Microwave on high for 2 minutes. Stir in the peanuts and microwave for another 3 and a half minutes. Stir in butter and vanilla and microwave for another minute and a half. Stir in the baking soda and mix well. Pour the mixture onto the prepared baking sheet and spread it out in a thin layer. Let it cool completely then break into pieces before serving.
