Preparation:
Place the chicken in a roasting pan and set aside. Place all of the marinade ingredients in your food processor and blend until smooth. Pour the marinade over the chicken. Make sure all of the chicken is coated. Place the chicken skin side down in the pan. Cover and refrigerate for 30 minutes-24 hours. When ready to cook, preheat your oven to 375 degrees F. Add the 1/2 cup of fresh cranberries, thyme, and Italian seasoning to the chicken. Bake for 25 minutes then remove from the oven and turn all the pieces skin side up. While the chicken is baking, stir together the maple syrup and 1 tbsp of balsamic vinegar. Brush this mixture onto the chicken skin. Broil the chicken for 5 minutes or until the skin is crisp. Before serving, spoon sauce from the bottom of the pan onto the chicken.
