Preheat your oven to 350 degrees F and spray a 9×9 inch dish with non stick cooking spray. In a mixing bowl, whisk together the eggs, half and half, salt, pepper, and nutmeg. Stir in the corn, half of the cracker crumbs, and 1 tbsp of melted butter. Pour the mixture into the prepared pan and sprinkle the cheese over it. Mix the remaining cracker crumbs with the remaining butter and sprinkle it over the cheese. Bake 40-50 minutes or until golden brown and crispy on the top and edges.
