In a medium sized bowl boil water and add the tomatoes to it. Be careful not to splash any hot water. Let the tomatoes cook in the boiling water for 2 – 3 minutes or until you can see the outer skin peeling off. When the tomatoes reach this stage, remove the pan from the gas and remove the tomatoes from the boiling water. Let them cook and them peel off outer skin. Then puree these tomatoes into a fine paste, do not add any water. In a separate medium sized deep and flat saucepan heat the oil and add the chopped onions and garlic to it. Fry them till they turn golden brown. Add the tomato puree to this and stir. Allow it to cook for some time and then bring the sauce to a boil. Boil for about 3 minutes. Now add half cup water to this sauce and stir to combine everything. Allow the water to come to a boil. Boil for at least 2 minutes. Now add the salt, black pepper, oregano, chili flakes, tomato sauce and sugar to this mix and keep stirring till it reaches a sauce consistency. Serve with your choice of pasta!
