Preheat your oven to 250 degrees F. Line a baking sheet with parchment paper. In a large mixing bowl, whisk together the egg white and vanilla until frothy. In another mixing bowl, whisk together the sugar, cinnamon, and salt. Add the pecans to the egg white mixture and coat evenly. Pour half of the sugar mixture over the coated pecans, stir well, and the add the other half to half of the sugar mixture. Pour the coated pecans onto the prepared baking sheet in an even layer. Bake for 1 hour, stirring every 20 minutes. Allow the pecans to cook then store in a airtight container.
