Preheat your oven to 400 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray. Cover the cookie sheet with one layer of saltine crackers. In a saucepan over medium heat, bring the butter and brown sugar to a boil while constantly stirring for 3 minutes. Remove the saucepan from the heat and add in the vanilla extract. Pour the mixture over the crackers and bake for 5-6 minutes. Remove the baking pan from the oven and immediately pour the bag of chocolate chips to melt for a minute or two and then spread it out evenly. Allow it to cool then break into pieces.
