Boil the chicken thighs and drumsticks in chicken broth and water for 45 minutes. Remove the chicken from the liquid and let it cook slightly. Shred the chicken off of the bones. Pour the liquid into the slow cooker and set to high. Separate the dumpling strips and break each strip in half. Add the dumplings to the slow cooker one at a time. Add the chicken, onion, celery, thyme, salt, butter, and pepper to the slow cooker. Let the chicken and dumplings cook on high for 2 hours, stirring occasionally. Reduce heat to low and let cook for another 2-4 hours on low.
