Cheesy breakfast spinach and bacon (Crock Pot)
Ingredients:
- 6 organics eggs
- 1 cup baby spinach, packed
- 1 cup shredded Parmesan
- 1/2 cup shredded Cheddar cheese
- 1 cup bacon, crumbled
- 1 cup plain yogurt
- 1/2 tsp thyme
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/3 cup diced mushrooms
- Salt
- Ground pepper
- Olive oil
Preparation:
In a bowl, whisk the eggs, dry herbs and salt and pepper together. Stir in the crumbled bacon, spinach and shredded cheese. Grease the bottom of your Crock Pot with olive oil. Pour eggs mixture into Crok Pot, cover and cook on high for about 2 hours. Serve hot.
