In a large bowl, mix together the sugar, brown sugar, and cinnamon. In a separate bowl, whisk together the egg white and vanilla until it is a little bit frothy. Spray your slow cooker with cooking spray. Put pecans in the slow cooker. Pour the egg mixture over the pecans and stir well. Sprinkle the cinnamon sugar mixture over the pecans and stir well. Cover and cook on low for 3 hours, stirring every 40 minutes. When there are 30 minutes left, pour 1/4 cup water into the slow cooker and stuff. Spread the pecans on a baking pan and let them cool for 15-20 minutes.
