Aubergine croquettes
Serves: 4
Ingredients:
- 1 aubergine
- 2 eggs
- 2 dipped in water and squeezed sliced of bread
- 50 g grated Parmesan
- 1 tablespoon plain flour
- Parsley
- 1 clove chopped garlic
- Salt
- Pepper
- Olive oil for frying
Preparation:
Chop the aubergine into large chunks and boil in salted water. Drain, squeeze out the excess water and break up with a fork. Amalgamate with all the other ingredients and shape into small balls. Fry in plenty of olive and serve hot.
