Vegetable stew
Servings: 6-8
Ingredients:
- 2 yellow onions, diced
- 3 stalks celery, diced
- 2 large carrots, sliced
- 3 potatoes, peeled and diced
- 1 cup mushrooms, cleaned and chopped
- 1/4 cup lentil
- 3 cloves garlic, minced
- 1/2 tsp grated ginger
- 1/2 tsp thyme
- 1 bay leaf
- 2 cups water
- 1/4 cup soy sauce
- Salt to taste
- Pepper to taste
- Cornstarch
Preparation:
Place the onions, celery, carrots, potatoes, mushrooms, lentils, garlic, ginger, thyme, bay leaf. water, and soy sauce in your slow cooker. Cook for 10-12 hours on low. Around 8-10 hours, add the salt, pepper, and a little bit of corn starch if your want your stew to be thicker.
